镀铬钢板表面微观缺陷对其所包装食品的影响

摘要 [目的]研究镀铬钢板表面微观缺陷对其所包装食品的影响。[方法]将带有微观缺陷的镀铬钢板浸润在酸性介质和食用啤酒两种液体中,模拟其在食品包装中的实际应用情况。[结果]表明在酸性介质中Fe离子、Cr离子向液体的迁移量随变形量的增加,时间的延长而增加;在啤酒(弱酸性)介质中Cr离子迁移量相对较少,Fe离子迁移量随时间延长而增加。建议加强食品包装用的进口镀铬钢板表面微观缺陷的检验,保障采用铬钢板罐装食品的卫生安全。 The effect of the surface of micro-defects of tin plate steel (TFS) used for food packaging to the quality of food was studied. The specimens with surface micro-defects at different deformations were dipped in the acidic solution and beer separately to simulate as packaging material contacting food. It showed that the migrating volumes of Cr and Fe ions were increased by the time and deformation in the acidic solutions; but a little migrating increase of Cr ion in beer. It suggested that more attention should be paid on inspection of the surface micro-defects of TFS used for canned food packaging to protect the safety of TFS canned foods,
