摘要 将临武鸭屠宰后测定产肉性能和肌肉品质。结果表明,临武鸭的屠宰率为88.1%,半净膛率为82.07%,全净膛率为72.20%,胸肌率、腿肌率、皮脂率、腹脂率分别为9.23%、10.24%、26.53%、0.94%。公母临武鸭之间除腹脂率差异显著外(P<0.05),其余指标差异均不显著。临武鸭屠宰后1h、24h胸肌pH分别为5.50、5.87。腿肌肌纤维直径为133.91um。胸肌失水率和熟肉率分别为24.17%、60.74%,腿肌失水率和熟肉率分别为23.90%、61.88%。 The carcass quality of Linwu mallard was measured after slaughtering. The results indicated that dressed percentage was 88.1%, percentage of half-- eviscerated yield was 82.07 %, percentage of eviscerated yield was 72.20%, percentage of breast muscle, leg muscle, skin fat and abdominal fat were 9. 23%, 10. 24%,26.53% and 0. 94%, respectively. No significant difference was found in other traits between the male and female except for abdominal fat rate. pH in breast muscle after slaughter were 5.50 (after 1h) and 5.87(after 24h). Leg muscle fiber diameter was 133.91um. Water loss rate and cooking rate of breast muscle were 24.17% and 60.74% ,23.90% and 61.88% in leg muscle.
