摘要
确立了用色谱／质谱／质谱（ＧＣ／ＭＳ／ＭＳ）测定食品中胆固醇（ｃｈｏｌｅｓｔｅｒｏｌ）的一种新方法。试样经乙酸乙酯提取后，ＧＣ／ＭＳ／ＭＳ测定分析，以胆固醇分子离子（ｍ／ｚ３８６）为母离了，以其子离子（ｍ／ｚ３６８、ｍ／ｚ３０１、ｍ／ｚ２３１）为定量分析的碎片离子。线性好，回收率高，方法可靠。
A new method was developed for the determination of cholesterol in food by GC/MS/MS. The cholesterol in sample was extracted with ethyl acetate. The determination was carried out using GC/MS/MS with molecular ion (m/z 386) of cholesterol as father ion and fragments (m/z386, m/z301, m/z231) as daughter ions for quantitative analysis. The method is of good linearity and high recovery.
