摘要
本文讨论啤酒高级醇的形成机理,啤酒中高级醇域值及其对啤酒风味的影响,影响啤酒中高级醇的因素和控制措施。
This paper discussed the formation mechanism, the threshold value and the effect to beer flavor of the senior alcohol of beer. Meanwhile, the factors affecting the senior alcohol of beer and the controlling measures are also be discussed.
