摘要
以玉米粒为原料,采用焦亚硫酸钠、柠檬酸护色浸泡,α-淀粉酶酶解等工艺,加入乳化剂磷脂和增稠剂CMC-Na等,制得天然玉米饮料。
Use maize as material,determine technological process by adding pyrosulfite of sodium,citric acid to protectcolour and soak,α-amylase to enzymolysis,take phosphatide as emulsion and CMC-Na as thickening agent.
