摘要
分形理论的引入给解决和解释食品科学与工程领域出现的一些复杂问题提供了一种新的思路和方法。本文综合评述了分形理论在食用和药用植物的选用、凝聚、结晶及过滤等单元操作、农产品分级及其它相关领域中的应用成果。
The introduction of fractal theory provides a new thinking and way to resolve and explain some complicated problems in the field of food science and engineering.This paper reviews and discusses some research achievements about fractal phenomena in selection of medicinal and edible plants,in processing operations on condensation,crystallization and filter,and in classification of agricultural products,etc.
