成年东北林蛙的屠体性能及相关性研究

Studies on the Slaughtering Parameters and Correlation Analysis among Indexes of Grown Rana dybowskii

用成年东北林蛙(♀61只+♂75只)进行屠宰试验,测定体重、皮重、骨重、肌肉重、头重和产油量等指标,并对各指标间的相关性进行分析。结果表明:林蛙的骨重占体重的比例最大,肉重次之,头重最小。卵和油所占比例分别为11.52%和14%。雄蛙的产肉率比雌蛙的高出4.94个百分点。林蛙的体重与皮重、体重与肉重及体重与骨重均呈强正相关,且雌雄间相关系数差异不显著(P>0.05)。体重与头重呈中等强度的正相关,且性别问差异显著(P<0.05)。体重与卵重和油重均呈中等强度的正相关。林蛙的皮、肉、头的含水量较高,骨和油次之,卵的含水量最低,仅为8.11%。雌蛙的皮、肉、头、骨的含水量分别较雄蛙的略高。

In this study, 61 9 and 75♂ grown brown frogs were slaughtered. Following indexes were determined： live body weight （LBW）, skin weight （SW）, bone weight （BW）, meat yield （MY）, head weight （HW）, egg yield （EY） and the production of Oviductus Ranae （POR） etc. The correlations between the LBW and the other indexes were analyzed. The results showed that BW occupied the biggest part of LBW, MY took the second place, HW was the minimum. While, POR and EY were 14% and 11.52% of LBW respectively. MY of male frog was 4.94% higher than that of the female. SW, MY and BW were positively related to LBW in both males and females. But, there were no significant differences of correlation coefficient between sexes （P 〉 0.05）. There was a mild positive correlation between LBW and HW, and their correlation coefficients were significantly different （P 〈 0.05）. EY and POR were mild positively related to LBW. The moisture contents of skin, meat and head were higher than those of the bone and oviducts. Eggs had the minimum moisture content of 8.11%. Additionally, the moisture contents of skin, meat ,bone and head of female brown frogs were higher than those of the males.
