摘要
采用胶体滴定法对高取代度阳离子淀粉的电荷性质进行研究.研究结果表明,高取代度阳离子淀粉的电荷性质受pH值和贮存时间的影响较大,热糊化和冷糊化对其电荷性质影响不大,采用胶体滴定和凯氏定氮两种方法测定高取代度阳离子淀粉的取代度试验结果相差较大.
The charge property of cationic starch with high substituted degree is studied by colloid titration. The results show that its charge property is affected much by pH and storing time, and swelling by hot or cool water influences its charge density little. The determining results for the DS of high substituted cationic starch with colloid titration and GB method separately are different.
