摘要 橄榄油具有极高的营养价值,其主要组成成分为可皂化物及不可皂化物,其中可皂化物占98.5%~99%,主要由脂肪酸和甘油三酸酯组成,不可皂化物占1%~1.5%,由石炭酸、维生素E、甾酮、脂肪醇、磷脂、色素、挥发性化合物等物质组成.与其它植物油和动物油相比,橄榄油具有独特的营养、保健和医学功效,主要具有促进骨骼生长及神经系统发育,美容与抗衰老,改善消化系统功能的保健功效.还具有预防心血管疾病,防癌,预防糖尿病及阿尔茨海默氏症等功效. Olive oil has very high nutritional value, its main components are saponifiable substance and nonsaponifiable substance, the percentage of saponifiable substance is 98.5 % ~ 99 % , mainly composing of fatty acid and triglycerides, the percentage of non-saponifiable substance is 1% ~ 1.5 % , mainly composing of carbolic acid, vitamin E, sterone, fatty alcohol, phospholipid, pigment, volatile compound. Comparing with other vegetable oil and animal oil, olive oil has special nutritional and health value, with the function of promoting the growth of bone and the development of nerve system, improving the function of digestive system, preventing the cardiovascular disease, cancer, diabetes and Alzheimer's disease.
