介绍了馥郁香型白酒生产的立体制曲、五粮糖化、大曲续糟泥池发酵、清蒸清烧工艺及双轮底发酵5个方面的特色生产工艺,并对馥郁香型白酒主要香气的形成与工艺的关系进行了阐述,对了解馥郁香型白酒生产工艺具有指导作用。
The characteristic production techniques of Jiugui Liquor including solid starter-making, saccharification of five kinds of grains, pits fermentation after the addition of Daqu in fermented grains, steaming, and double bottom fermentation were introduced. Besides, the relations between the formation of liquor flavor and the production techniques were elaborated, which could guide the production of heavy perfume liquor. (Tran. by YUE Yang)
