摘要
酿酒原料有高粱、大米、糯米、小麦、玉米、大麦,不同的酿酒原料所产酒的产质量不同,不同的原料对生产工艺的要求也不同,名优白酒生产多以高粱为主。酿酒原料的检验是保证和提高白酒质量及产品安全的基础和前提。提出建立酿酒原料基地对促进白酒产业发展的必要性思考。
Liquor-making raw materials cover sorghum, rice, glutinous rice, com and wheat and barley. Liquor produced by different raw materials has different quality. Besides, different raw materials has different technical demands in the production. Most famous liquor products are produced by sorghum. The testing of liquor-making raw materials is the prerequisite to improving liquor quality and ensuring liquor safety. In this paper, the necessity of the establishment of liquor-making raw materials base to advance the development of liquor-making industry was discussed. (Tran. by YUE Yang)
