食品添加剂磷酸盐具有保水、保湿、黏结、增塑、稠化、增容、改善流变性能及螯合金属离子等作用,能改进食品的组织结构和口感,对食品品质的提高和改善起着重要的作用,几乎是所有食物的天然成分之一。在食品加工行业中,作为食品添加剂,已逐步得到广泛地应用。主要对常用的食品添加剂磷酸盐系列产品在食品加工中的作用、产品应用的市场、使用安全性及其质量等方面进行介绍,为我国主要的食品添加剂磷酸盐的开发提出了建设性意见。
Phosphates as food additives have effects on water retention, moisture retention, bonding, plasticization, thick- ening,solubilization,improving theological property and chelating metal ion,and improving organization structure and taste of food. Phosphates play an important role in improving and enhancing the quality of food, and they are almost one of the nat- ural ingredients in all food. They have been widely used as food additives in food processing industry. The effect of phos- phates'series products in food processing industry ,product market,safety and quality are introduced. Then constructive sug- gestions about the development of phosphates which are the main food additives in China are put forward.
