沼泽红假单胞菌类胡萝卜素稳定性的研究

Studies on the stability of carotenoid in Rodopseudomonas palustris :

研究了沼泽红假单胞菌类胡萝卜素的稳定性。该色素对氧、光照、温度的作用有一定的耐受性，在微酸性至弱碱性条件下有较好的稳定性。但当氧、光照、温度的作用强度增加，介质ｐＨ值进一步改变，该色素将受到破坏，表现为褪色或变色，吸收光谱发生改变。

The stability of carotenoid pigment extracted from Rodopseudomonas palustris was studied. The results indicated that the pigment was resistant to oxygen,sunlight and temperature to some degree. Subacid or weak alkali had little negative effects on it also. But when effects of the factors above increased or the pH value of the solvent changed the stability would be damaged.
