摘要
比较了水牛奶与荷斯坦牛奶粒径分布,并采用粒径分析法研究了均质工艺对水牛奶粒径分布的影响,结果表明:水牛奶脂肪粒径大于荷斯坦牛奶,水牛奶经65℃和24MPa的均质工艺处理后,稳定性较好;粒径分析法是一种快速、准确的判定乳品稳定性的方法。
Particle size distribution between buffalo milk and Holstein milk, influence of homogenizing conditions on the particle size distri- bution of buffalo milk were analyzed by particle size analysis in the paper. The results show that particle size of buffalo milk was bigger than that of Holstein milk. The buffalo milk had a better stability when it was homogenized at 65℃,24 MPa. The particle size analysis was a rapid and accurate method to determine the stability of milk.
