铁棍山药片护色工艺与无硫护色剂的筛选 被引量:17

摘要 为了解决铁棍山药片加工过程中的褐变问题,寻找安全有效的无硫护色剂,在对其护色工艺(厚度及处理方式)研究的基础上,以柠檬酸、乙酸、植酸、次氯酸钠、EDTA二钠、氯化钙对铁棍山药片进行单一和复合护色处理,并研究其护色效果。结果表明:经0.25%柠檬酸+0.1%植酸+0.25%氯化钙处理的山药片感官质量最好,可替代含硫护色剂,护色工艺关键是将铁棍山药切成2mm左右厚的薄片,室温下在含0.25%柠檬酸和0.1%植酸的溶液中浸泡2h后,放入0.25%氯化钙溶液中浸泡1h,40℃烘干。 In order to solve the problem of browning during the process of Dioscorea opposita Thunb. cv. Tiegun slices, based on the study of the slices thickness and the treatment method, Chinese yam slices were treated with citric acid, acetic acid, phytic acid, sodium hypochlorite, disodium EDTA and CaCl2, individual or combined multiple factor, to study its anti-browning effects for finding a safe and effective reagent without sulfite. The results showed that the sensory quality of slices treated with 0.25% citric acid+0.1% phytic acid+0.25% CaCl2 was the best, so, 0.25% citric acid+0. 1% phytic acid+0. 25% CaCl2 could replace sulfite sodium. The key points of anti-browning technology without sulfite were as follows: at room temperature, the Chinese yam were sliced into about 2 mm thickness, the slices were dipped into the mixed solutions of 0.25% citric acid and 0.1% phytic acids for 2h, then soaked in the 0.25% CaCl2 solution for lh, finally, dried at 40℃.
