摘要
采用国际上通用的营养价值评价方法,对不同碳氮比培养料栽培的猪肚菇第二潮子实体进行蛋白质营养价值评价。结果表明,子实体蛋白质中,必需氨基酸含量以培养料Ⅲ(碳氮比为35:1)的最高,之后依次为培养料Ⅳ、Ⅱ、Ⅰ、Ⅴ、Ⅶ和Ⅵ;而蛋白质营养综合评价结果则以培养料Ⅰ(碳氮比为25:1)的最高,其次为培养料Ⅲ,再次为培养料Ⅱ、Ⅴ、Ⅶ、Ⅵ和Ⅳ。
Protein from Panus giganteus fruit bodies cultivated using substrates with different C: N ratios was assessed in terms of essential amino acid content and six nutritional quality indices Amino Acid Score (AAS), Chemical Score (CS), Essential Amino Acid Index (EAAI), Biological Value (BV), Nutritional Index (NI) and Amino Acid Ratio Coefficient Score (AARCS). The highest content of essential amino acids was recorded in protein from fruit bodies cultivated using substrate Ⅲ with a C: N ratio of 35 : 1. Protein from fruit bodies cultivated using substrate Ⅰ (C : N ratio 25 : 1) had a superior nutritional value, and was ranked highest in terms of three protein quality indices (CS, AARCS and NI), second highest in the case of EAAI and BV, and had the third highest AAS. Protein from fruit bodies cultivated using substrate Ⅲ (C : N ratio 35 : 1) was ranked highest in terms of two indices (EAAI and BV) and second, third, fourth and seventh in the case of AAS, NI, CS and AARCS, respectively.
