溶剂体系中猪胰脂酶催化醇解过程中脂肪酸选择性的研究

摘要 本研究采用猪胰脂酶催化甘油与脂肪酸甲酯反应,分析反应过程中脂肪酸甘油酯的脂肪酸组成,研究醇解过程中脂肪酸的选择性。结果表明,醇解过程软脂酸的选择性要稍好于硬脂酸;对油酸的选择性好于硬脂酸和亚油酸;而对亚油酸和亚麻酸来说,在反应的开始阶段亚油酸的选择性强于亚麻酸,随着反应时间的延长两者的选择性几乎相同。
