复合酶酶解八角籽仁制油研究

摘要 为研究将八角籽仁油脂开发成为食用油,使用复合酶法水相提油工艺,以八角籽仁含油水提取液为研究对象,通过正交实验研究了酶解八角籽仁的条件对其油脂在水相分布的影响,其影响因素主要为酶/油料比、温度、pH、反应时间。结果表明,复合酶解提取八角籽仁含油水提液的最适工艺条件为:酶/油料比0.6%,温度50℃,pH7.0,反应时间4h,出油率为80.32%,为水相酶解提取八角籽仁油脂工艺的应用提供了基础。 With the purpose of developing the oils in the seeds of the Illicium verum Hook.f. into cooking oil by the application of the technique of aqueous extracting with compound enzyme,this study sets the aqueous extraction the oils in the seeds of the Illicium verum Hook.f. as the research subject,exploring the conditions for enzymatic hydrolysis the oils in the seeds of the Illicium verum Hook.f. and the effect brought about by the distribution of the oils in the aqueous phase.And the effective factors were mainly the enzyme concentration, temperature, pH and enzyme reaction time.The research demonstrated that the most suitable conditions for refining the oils in the seeds of the Illicium verum Hook. f. by the use of water as following :enzyme concentration 0.6%, temperature 50℃, pH 7.0, enzyme reaction time 4h,oil rate 80.32%. The instructions mentioned above lay the foundation for the improvement of the technique of refining the oils in the seeds of the Illicium verum Hook.f. through enzymatic hydrolysis.
