摘要 桑叶是食药两用物品,富含18种氨基酸、矿物质及黄酮类物质。新鲜桑叶经处理后制成桑叶糊包络化合物,加入到面粉中制得营养丰富的绿色挂面制品。实验结果表明:桑叶糊包络化合物制备工艺条件为:环糊精量10%,包埋时间3d,桑叶浆量25%;桑叶挂面的最佳工艺配方为:海藻酸钠量0.3%,桑叶糊添加量25%,食盐用量2.5%。 Mulberry,which contains 18 kinds of different amino acids, mineral substance and flavones,can be used as both food and medicine.Treated fresh mulberry leaf added into flour, nutrition noodles can be made and then green color in it can be preserved for a long time as well.The results showed that the best conditions of micro encapsulation were β- CD 10%, time of micro encapsulation 3d, mulberry leaf 25% ; the optimum conditions of nutrition dry noodles from mulberry leaf were 0.3% sodium alginate,treated mulberry leaf 25% and 2.5% NaCl.
