介绍了豆豉的成份及其医疗保健功能,探讨了大豆异黄酮在抗肿瘤、预防心血管疾病和预防骨质疏松症等方面的特性,比较了豆豉中异黄酮的传统提取工艺和现代提取工艺的优缺点,为豆豉的综合应用提供了理论基础.
This paper introduces the components of fermented soya bean and their functions of health care,, discusses the characteristics of isoflavones in soya bean in prevent tumors, cardiovascular diseases and osteoporosis, and compares the advantages and disadvantages of abstraction of isoflavones by traditional method and modem method, so as to offer the theoretical foundation for integrated application of the fermented soya bean.
