介绍了大足冬菜的传统生产工艺,首次规范公开了这一地方名菜的关键工序及其技术参数,介绍大足冬菜的质量标准。
This paper gave an introduction of traditional production technology of Dazu Chinese cabbage ,it standardized and disclosed the key procedure and technology parameters the first time of this local famous food ,the quality standard of Dazu Chinese cabbage was introduced as well.
