摘要
分析论证了我国碾米加工行业当前急需研究开发应用大米精碾、大米抛光、大米色选、米质调理、营养强化等关键技术,以提高大米产品的商品价值和食用品质,以及研究开发适销对路的大米食品,以达到增强市场竞争能力,增加社会效益和经济效益的目的。
The key techniques such as rice whitening, polishing, colour selecting, quality regulating and nutritional reinforcement, which need to be researched, developed and applied at present in our country, were described. The commercial value and edible quality of white rice should be improved by means of these techniques in order to enhance market competitiveness and to increase social and economic benefit.
