摘要 以川明参为主要原料,结合蜂蜜、陈皮、杭白菊、金银花等辅料研制川明参复合保健饮料。通过正交试验确定川明参水浸出物的最佳浸提工艺条件为温度95℃,时间25min,最佳料液比1:40;当杭白菊、金银花、陈皮浸体提液体积之比为2:1:1时,香味、滋味和回味都较好;最优饮料配方为柠檬酸0.25g,蜂蜜37.5g,川明参液125mL,混合液50mL(以250mL成品饮料计)。 Chuanminshen mixed with honey, pericarpium cirri reticulatae, hangbaiju, flos Lonicerae was the main material of the compound health beverage. The optimal extraction conditions of chuanminshen's water extract were determined by the orthogonal experiments and the results were as follows: the temperature 95℃; time of extraction 25min; the best ratio between materials and fluid 1:40. When the ratio of Hang Baiju's, flos Lonieerae's and pericarpium cirri reticulatae' extraction was 2:1:1, the fragrance, taste and aftertaste of the compound health beverage were all good. The optimal formula of the beverage was: citric acid 0.25g, honey 37.5g, extraction of Chuanminshen 125ml and mixed solution 50ml (counted by 250ml compound beverage).
