摘要
用原子吸收法测定了牦牛干酪中几种矿物质元素的含量。结果表明,干酪中含有丰富的Ca、P、Fe、Zn等元素。另外,测得干酪中粗蛋白含量约为740g/kg,在PAGE上主要显示αs1-酪蛋白和β-酪蛋白区带。
Samples of cheese prepared from Yak milk were used to assay the concentra-tions of several mineral elements with atomic absorption spectrophotometer.The resultsshowed that there was a large number of Ca,P,Fe and Zn elements in the cheese.The aver-age content of crude protein 738g/kg cheese.Both protein bands of αs1- casein and β-ca-sein,were mainly observed on gel plate when PAGE.
