摘要
以中高温曲作为研究对象,重点研究了曲药贮存过程中液化力、糖化力、发酵力等生化性能的变化,同时也研究了微生物种群和数量在这一过程中的变化。由生化性能以及微生物的变化,可得出曲药贮存4个月使用效果最好。
The shelf life of Quyao has tremendous influence on Daqu liquor and liquor yield. This paper targets at medium--high temperature Daqu and focuses on the change of chemistry characteristics as follows. Liquefying power, saccharifying power, fermenting power and so on; in addition, microbial species and quantity in this process of change are studied at the same time. By the changes of biological properties and microorganisms, it comes to a conclusion that 4--month shelf life is the best time length.
