本文概述了气调包装现状,详细阐述了肉品气调包装保鲜的机理,气体组成及其影响因素,对气调包装在鲜肉保鲜中的应用应注意的问题进行了探讨,并指出气调包装是冷却肉包装发展的重要方向。
This paper briefly introduced the application of modified atmosphere packaging (MAP) on meat and it's preservative mechanism, gas composition and impact factors, the issue of the application of modified atmosphere packaging for fresh meat should be noted that was discussed and pointed out that modified atmosphere packaging is an important direction in chilled meat packaging.
