熟肉店215份熟食制品微生物检验结果分析 被引量:3

摘要 目的了解郑州市中原区熟肉店熟食制品微生物污染状况,为卫生监督等部门加强监管、预防和控制食源性疾病的发生提供科学依据。方法按随机的原则对中原区辖区临街和集贸市场内的熟肉店进行卫生质量检查和产品抽检并对结果进行分析。结果抽检样品215份,合格85份,合格率为39.53%;菌落总数合格126份,合格率58.60%;大肠菌群合格91份,合格率42.33%。在临街店和集贸市场等不同经营场所中抽检的熟食制品合格率差异有统计学意义(χ2=8.91,P<0.01)。结论熟肉店普遍存在超范围经营凉拌菜现象,所销售的熟食制品被微生物污染程度较为严重,尤其是集贸市场内产品的卫生质量问题更为突出,提示熟食制品存在引发食物中毒的隐患,应引起卫生监督等相关部门的高度重视。 [Objective] To learn the microbial contamination status of the cooked products in Zhongyuan District of Zhengzhou city, and provide scientific evidence for the managements of sanitation to strengthen the surveillance, prevention and control of the occurrence of food-borne disease. [Methods] According to the principle of random, cooked meat shops in the street markets of Zhongyuan district were conducted health quality inspection and product sampling for the analysis. [Results] Of 215 samples, 85 (39. 53%) were qualified; 126 (58.60%) were qualified in colony count. 91 (42.33%) were qualified in coliform group. The differences of the qualified rates of cooked products between different operation places including street market and fair trade market was significant (x^2 = 8.91, P 〈 0.01 ). [ Conclusion ] The over scope of business such as selling the cold and dressed vegetable with sauce exists commonly in cooked meat shops. And the selling foods have terrible issues of microbial contamination, especially in the market. The health-related supervision department should attach great importance to the existed hidden dangers in cooked food.
