摘要
以DPPH.自由基清除率为筛选指标,应用L9(34)正交设计优化中性蛋白酶水解小麦面筋蛋白的最适条件,结果表明,当温度为45℃,pH8,料液比为5∶100(g/mL),水解时间4h时,酶解液的DPPH.清除率达到93.18%。由此可知,在此优化条件下,小麦面筋蛋白的酶解液具有较强体外抗氧化活性,具备深入研究价值。
Based on scavenging activities of DPPH· neutrase was optimized with the orthogonal design radical, the enzymatic hydrolysis conditions of wheat gluten by L9(34).Results obtained showed that the optimal conditions of neutrase to hydrolyze the wheat gluten could be set as follows :T = 45℃, pH = 8 ,the ratio of solid to liquid 5:100( g/ mL) ,and hydrolysis time 4h.Under above conditions, DPPH· radical scavenging ratio of hydrolyzes reached to 93.18%.Under the optimal conditions,hydrolyzes of wheat gluten by neutrase had good antioxidant activity in vitro and it was valuable enough for the future research.
