摘要 目的:为了解温州市熟食制品的微生物污染情况,为食品安全的危险性评估提供依据,并为本市的食物中毒的溯源提供方向。方法:依据食品的国家标准对221份熟食制品进行各种致病菌的分离、生化鉴定,对部分熟食进行大肠菌群计数。结果:从221份熟食制品中,检出金黄色葡萄球菌30株,检出率为13.57%;检出副溶血性弧菌8株,检出率为3.62%;检出单增李斯特菌4株,检出率为1.81%。结论:温州市熟食制品大肠菌群超标严重,并存在食源性致病菌的污染,其主要污染的致病菌是金黄色葡萄球菌和副溶血性弧菌,其次是单增李斯特菌。 Objective:To understand the Wenzhou City microbial contamination of cooked food products, for food safety risk assessment provide the basis for the traceability of food poisoning to provide direction. Methods:According to national standards for food a variety of pathogenic bacteria about 221 of cooked food products is isolated, biochemical identification, Some cooked food for coliform counts. Results:From 221 of cooked food products ,detecting Staphylococcus aureus 30 Strains, and the detection rate of 13.57% , detecting Vibrio parahaernolyticus 8 Strains, and the detection rate was 3.62%. Detecting Listeria monocytogenes 4 Strains, and the detection rate was 1.81%. Conclusion:In Wenzhou coliform about cooked food products Exceeding the health standards. Serious and foodborne pathogens pollution existing, which main pollution is Staphylococcus aureus and Vibrio parah- aemolyticus, followed by Listeria monocytogenes.
