摘要
以富含胶原的海产品下脚料为原料,以羟自由基清除活性为目标,分别以热水抽提,醋酸水解,海洋碱性蛋白酶894、胃蛋白酶、胰蛋白酶降解法制取活性胶原肽。经比较产物的活性、感官性状,发现酶法所得胶原肽明显好于其他方法,而海洋碱性蛋白酶894降解,所需时间最短,活性最高,感官性状最好,成本又低,在海洋功能食品原料的制备过程中体现出明显的优势。经SDS-PAGE电泳分析发现,其降解产物分子量在10 ku以下。
Marine active collagen peptides(MACP) which came from waste of seafood had been gotten by hot water, acetic acid degrading, enzymolysis of pepsin, trypsin and marine alkaline protease 894 respectively in the aim of hydroxyl radical scavenging. Enzymolysis was better obviously than other ways in the MACP's activity and sensory. Enzymolysis of marine alkline protease 894 had showed obviously advantages in the preparation of MACP, because its needed shortest time to hydrolysate, had highest activity and best sensory. The molecular weight of MACP had been determined under 10 ku by SDS-PAGE eletrophoresis.
