摘要
通过单独和混合培养乳酸乳球菌和啤酒酵母的试验实例,探讨由于氧供给的差异,乳酸菌和酵母联合培养中相互作用及其由此带来的变化。在有氧混合培养条件下,接种量为1×106 cfu/mL,在24 h乳酸乳球菌和啤酒酵母菌数生长最高,乳酸菌为8.8×107 cfu/mL,酵母为5.7×107 cfu/mL。
Through the experiment in individual and mixed culture of Lactococcus lactis and Saccharomyces cerevisiae, in the condition of different oxygen supply, to discuss the interactions and changes between Lactobacillus and yeast. In aerobic mixed culture conditions, the inoculation quantity is 1×10^6 cfu/mL, after 24 hours, Lactococcus lactis and Saccharomyces cerevisiae can reach the maximum, Lactoccoccus lactis is 8.8×10^7 cfu/mL, Saccharomyces cerevisiae is 5.7×10^7 cfu/mL.
