甜高粱汁发酵生产酒精工艺的研究 被引量:6

摘要 对甜高粱汁发酵生产酒精工艺进行研究,考察了甜高粱汁在不同的pH值、接种量、温度下的发酵和正交优化试验。结果表明,甜高粱糖汁发酵生产酒精的最优条件为:pH4.5、接种量10%、温度36℃。该工艺条件下可获得9.8%vol的酒精。 Alcohol production techniques by sweet sorghum juice fermentation were studied. The fermentation of sweet sorghum juice under different pH values, different inoculation quantity, and different temperature was investigated and orthogonal optimization tests were carried out. The results showed that the optimum technical conditions were as follows: pH value as 4.5, inoculation quantity was 10 %, and temperature was at 36 ℃. Under the above conditions, 9.8 %vol alcohol could be produced.
