摘要
简要介绍了香辛料的特点,国内外应用现状,综述了香辛料作为天然食品添加剂的抑菌及抗氧化机理,并展望其应用前景。
The characteristics of spices and their applications at home and abroad are introduced. The antibacterial and antioxidant mechanism of spices as natural food additives are summarized. And prospects for application of spices are described.
