The paper introduced the characteristics and extraction of protein from corn gluten meal （CGM）. The characteristics of CGM protein determine the extraction and application. It is worthwhile to popularize the ultrasonic alcohol extraction of zein and ultrasonic-assisted lye extraction of glutelin at present time.
