摘要
该文阐述玉米黄粉中各蛋白组分性质及提取方法,指出超声波乙醇法提取醇溶蛋白和超声波辅助碱法提取谷蛋白是目前较有推广应用价值提取法;且玉米黄粉中各蛋白组分提取及应用要根据其性质确定。
The paper introduced the characteristics and extraction of protein from corn gluten meal (CGM). The characteristics of CGM protein determine the extraction and application. It is worthwhile to popularize the ultrasonic alcohol extraction of zein and ultrasonic-assisted lye extraction of glutelin at present time.
