双液相亚麻籽分离蛋白的二级结构和流变学特性研究

摘要 探讨了正己烷-乙醇-水双液相技术(TPS)进行亚麻籽提油脱氰苷后亚麻粕中分离蛋白的流变学特性和二级结构。结果表明,TPS亚麻分离蛋白溶液的黏度随着浓度的增加而增加,分离蛋白溶液表现出剪切变稀的假塑性和弹性性质,贮能模量G′和损耗模量G″均随温度的升高逐渐增加。另外,双液相萃取使得亚麻分离蛋白的结构更加紧密。 Oil and cyanogenic glycosides were extracted simultaneously from flaxseeds by two- liquid- phase system (TPS) of ethanol- hexane- water. The secondary structure and rheological property of the TPS flaxseed protein isolates gained from the flaxseed flake after the TPS extraction were investigated. Results show the viscosity of TPS flaxseed protein isolates solution increases along with the increase of flaxseed protein isolates concentration, and the protein isolates solution displays pseudo- plastic and elastic nature, and its storage module G' and loss module G" increase gradually along with temperature rising. Additionally, TPS extraction leads the structure of the flaxseed protein isolates more compact.
