摘要 介绍了DHA的生理功能,详细阐述了DHA对婴幼儿、孕妇和哺乳期妇女的生理作用,及在特殊食品中的应用。同时讨论了DHA在加工和储存过程中稳定性的影响因素,并介绍了增强稳定性的措施。 Physiological function of docosahexaenoic acid (DHA) is introduced in this paper. Describe the effect of DHA on infant, pregnant and lactating women, and the application in especial food. Influence factor on stability of DHA in process and storage is discussed and the measure to increase stability is also described.
