摘要
目的深入研究长柄扁桃仁的营养价值。方法使用原子吸收和氨基酸分析仪等方法对长柄扁桃仁的微量元素和氨基酸进行分析。结果长柄扁桃仁中含有9种人体所需的微量元素,含量大小依次为K>Mg>Ca>P>Na>Fe>Zn>Mn>Cu,其中K,Ca,Fe,Zn的含量分别为6930.9 mg/kg,3396.8 mg/kg,8162.74 mg/kg,44.19 mg/kg,未检出Pb,Cd,Hg,As等有害元素;含有18种氨基酸,总量为21.187%,8种人体必需氨基酸总量6.301%,其他具有特殊药理作用的氨基酸如谷氨酸、天冬氨酸及甘氨酸等含量也很丰富。结论长柄扁桃仁营养丰富,具有进一步开发的价值。
Aim To study the effective gist for opening out the nourishment of amygdalus. Methods The trace elements were determined by the method of atomic absorption spectrometry, and the amino acids were analyzed by the amino acid analyzer. Results There are nine abundant mine elements whose content isK 〉 Mg 〉 Ca 〉 P 〉 Na 〉 Fe 〉 Zn 〉 Mn 〉 Cu, and in which the content of K,Ca,Fe and Zn is 6930. 9 mg/kg,3396. 8 mg/kg,8162.74 mg/kg,44. 19 mg/kg and that the harmful elements-Pb, Cd, Hgwere not discovered in the kernel. There are 21. 187% eighteen amino acids and 6. 301% eight amino acids being indispensable to body in the almond kernel, and other active amino acids such as glutamic acid, arginine, aspartic acid, glycin, histidine are also rich in it. Conclusion The amygdalus is fall of nourishment and value to process.
