摘要
[目的]分析顶坛花椒挥发油的含量和化学组成。[方法]利用气相色谱-质谱法(GC-MS)对贵州顶坛花椒和四川省茂县大红袍花椒的挥发油化学成分进行了分离鉴定,用峰面积归一法测定了已确定组分的相对含量,并对2种花椒的挥发油化学成分进行比较。[结果]贵州顶坛花椒共鉴定出29个化合物,按峰面积计算,检出率为99.417%,四川省茂县大红袍鉴定出38个化合物,检出率为97.685%;顶坛花椒挥发性成分中的芳樟醇含量尤其高,达到茂县大红袍的4.56倍。顶坛花椒挥发油中单萜和倍半萜衍生物含量高达93.985%,而茂县大红袍只有77.256%。感官评价表明,顶坛花椒的香味比茂县大红袍浓郁。[结论]顶坛花椒与茂县大红袍的挥发油均有多种成分和含量存在显著差异。
[ Objective] The purpose was to analyze the content and chemical composition of volatile oil of Zanthoxylum planispinum vat. dintanensis. [ Method] The chemical ingredients of volatile oil in Z.P. dintanensis of Guizhou and Zanthoxylum bungeanum Dahongpao in Maoxian County of Sichuan Province were isolated and identified by utilizing GC-MS, the relative contents of confimned components were determined with peak area normalization method, and the chemical ingredients of volatile oil of two kinds of Z. bungeanum was compared. [Result] There were 29 compounds identified from Guizhou Z.P. dintanensis with detection rate of 99.417% in light of counting of peak area; 38 compounds were identified from "Dahongpao" Z. bungeanum of Maoxian County of Sichuan Province, with detection rate of 97.685%. Among the volatile oil ingredients of Z. P. dintanensis, the linalcol content was high particularly, which reached 4.56 times of Maoxian "Dahongpao". The contents of monoterpene and sesquiterpene derivatives in the volatile oil of Z.P. dintanensis were up to 93.985%, whereas the corresponding content was only 77.256% for Maoxian "Dahongpao". The sensory evaluation showed that the aroma of Z. P. dintanensis was stronger than that of Maoxian "Dahongpao". [ Conclusion] The volatile oil of Z. P. dintanensis and Maoxian "Dahongpao" had significant difference on the multi composition and contents. In light of
