摘要
[目的]了解柑橘果实发育和贮藏过程中活性氧代谢的变化规律。[方法]以国庆1号温州蜜柑(Citrus unshiuMarc)为材料,研究果实发育和贮藏过程中抗氧化酶活性、活性氧和抗氧化剂含量的变化。[结果]过氧化氢酶(CAT)、过氧化物酶(POD)和超氧化物歧化酶(SOD)活性在成熟过程中幼果期最高;过氧化氢(H2O2)含量在果实膨大期以后稳定增加,贮藏20 d后又表现为下降趋势;谷胱甘肽(GSH)含量在幼果期和膨大期之间差异极显著(P<0.01);抗坏血酸(AsA)含量最大值出现在果实膨大期,贮藏期含量没有差异。[结论]该研究为柑橘的栽培、果实的贮藏及其保鲜提供了参考。
[Objective]The aim was to study the change laws of active oxygen metabolism during the development and storage process of Citrus unshiu fruits. [Method]With Citrus unshiu Marc variety Guoqing No. 1 as materials, the changes of antioxidant enzyme activity, active oxygen and antioxidant content in the development and storage process of fruits were studied. [Result]The activities of CAT, POD and SOD during the maturity process were highest in young fruit stage. The content of H2O2 increased steadily after fruit expanding stage and then showed a decreasing trend after storing 20 days.The content of GSH had significant difference among the young fruit stage and expanding stage. The maximum content of AsA appeared in fruit expanding stage and the content had no difference in the storage stage. [Conclusion]The study provided references for the cultivation, fruit storage and fresh-keeping of oranges.
