可食性大豆分离蛋白膜成膜工艺及保鲜性研究 被引量:3

摘要 本文通过利用大豆分离蛋白(SPI)和甘油、亚硫酸钠、葡萄糖及果胶的复合制备出具有一定机械性能和阻湿性的可食性膜,同时测定其理化特性,得到较好的配方和工艺,并对其保鲜性能进行了测试。
