摘要
目的了解龙岩市大型超市、酒店熟肉制品的卫生现状,进一步加强治理餐桌污染。方法2007年9月,采集该市大型超市及酒店13家的熟肉制品129份,检测卫生微生物学常规项目。结果129份熟肉制品总超标率为62.79%。其中菌落总数超标23.25%,大肠菌群超标率58.14%,有5份样品检出金黄色葡萄球菌,未检出沙门菌和志贺菌。抽检的熟肉制品有酱卤肉、肉松、肉灌肠3类,各类的抽检超标率差异有统计学意义(χ2=24.57,P<0.01)。不同场所中抽检的熟肉制品,大型超市的熟肉制品微生物超标率高于酒店(χ2=4.86,P<0.05)。结论龙岩市大型超市及酒店熟肉制品存在不同程度的微生物污染。应加强生产、销售过程的卫生管理,防止食源性疾病发生。
[ Objective ] To understand the hygiene status of cooked meat in large supermarket and hotel in Longyan City, and further strengthen the control of table pollution. [ Methods] 129 samples of cooked meat were collected from 13 large supermarkets and hotels in September 2007, and then conducted health microbiological test. [ Results] Of 129 samples, the total superscale was 62.79% , among which 23.25% were colony count over standard, 58.14% were coliforms overstandard, 5 had staphylococcus au- reus detections, Salmonella and Shigella were not detected. The differences of superscalar sampling rate among different types of cooked meat of Braised pork, dried meat floss and meat enema were significant (X^2 = 24.57% P 〈 0. 01 ). The microbial superseale rate of cooked meat in large supermarkets was higher than that in hotels ( X^2 = 4.86, P 〈 0.05 ). [ Conclusion ] Microbial contamination exists in large supermarkets and hotels in Longyan City. Health management in meat production and sale should be strengthened to prevent food-borne diseases.
