腐竹废水制备大豆多肽复合酶解条件研究 被引量:1

摘要 将腐竹废水进行回收利用,经蛋白酶酶解、分离、提纯制得大豆多肽。通过正交实验分析,确定腐竹废水复合酶解的最佳工艺条件为:采用三酶复合蛋白酶(由碱性蛋白酶、木瓜蛋白酶和菠萝蛋白酶以1∶2∶4的比例复合而成)、底物含量3%、pH值8.0、酶解时间4 h,此时多肽转化率为94.56%。 After the protease hydrolysis, separation and purification, the soybean peptide was obtained from yuba wastewater. Through orthogonal test analysis, the optimum composite enzymatic hydrolysis conditions were determined as follows:the complex enzyme was made by alkaline protease, papaya protease and pineapple protease with a ratio of 1 : 2 : 4, the substrate content was 3%, pH value was 8.0 and hydrolysis time was 4 h. Above these conditions the peptide enzyme conversion could reach 94.56%.
