“勿忘我”花色素的提取及稳定性研究 被引量:11

摘要 研究蓝紫色"勿忘我"花色素的提取条件和稳定性。该色素易溶于酸性的水、乙醇、甲醇,色素在酸性条件下显红色,在中性和碱性条件下显青绿色至黄色;色素在530~540nm处有最大吸收峰;最佳提取溶剂为pH2的55%乙醇溶液。纸色谱分析有两个斑点,认为色素为花青素。色素总得率为15.5%,色价E11c%m(540nm)=36.55。色素在酸性条件下和60℃以下稳定,对光较稳定。氧化剂H2O2和还原剂Na2SO3对色素有破坏作用,还原剂Na2S2O3和Vc对色素无明显影响。金属离子Fe3+、Mg2+影响色素的稳定性,Na+、K+、Ba2+、Ca2+等对色素的稳定性无明显影响。蔗糖、淀粉、苯甲酸、醋酸等添加剂对色素稳定性无明显影响。 The stability and extracting conditions of the pigment in violet flowers of Forget-me-not(Limonium Sinuatum) was studied. This pigment is soluble in acid water, alcohol and methanol. The pigment is bluish- green in neuter and yellow under alkaline conditions. The maximum absorptive peak of ultraviolet-visible spectrogram of the pigment is at 530-540 nm. The best extracting solvent is 55% alcohol (pH 2). Paper chromatogram results show two spots. It is believed that the pigment is anthocyanins. The yield of the pigment is 15.5%. E1cm^1% (540 nm)=36.55. The pigment is stable in acid and below 60 ℃ and under light conditions. The pigment can be destructed by H2O2 and Na2SO3 while Na2S2O3 and Vc have no effect on it. Fe^3+ and Mg%2+ undermine the stability of the pigment, while Na^+, K^+, Ba^2+ and Ca^2+ have no effect on it. Sucrose, starch, benzoic acid and acetic acid have no effect on the stability of the pigment.
