Application and perspective of α-Lipoic acid used in health food

摘要 综述硫辛酸在保健食品领域的国际国内研究概况,阐述了其在保健食品领域中的广泛应用前景。详细讨论硫辛酸在体内的吸收代谢、生物利用度及安全性评价等方面的研究进展。概括硫辛酸应用研究的主要方面及其应用过程中存在的主要瓶颈问题,探讨采用食品纳米技术研制新型硫辛酸脂质纳米粒以解决上述问题、促进硫辛酸应用的可能性。 This review generalized the domestic and international research progress of α-lipoic acid(ALA)in health food fields and the potential application of food nanotechnology in ALA-related food. The research progress concerning the metabolism, bioavailability and biocompatibility of ALA in vivo were discussed in details. The main aspects of ALA application were introduced and the key problems including the bioavailability and stability of ALA were suggested. To overcome these barriers, the possibility of using food nanotechnology to develop new ALA lipid nanoparticles was also discussed.
