摘要
目的:研究浙江省5种杨梅果渣(荸荠、晚稻、东魁、丁岙和早大梅)的抗氧化活性、膳食纤维含量和膳食纤维功能特性。方法:膳食纤维采用酶质量法分析,抗氧化活性采用FRAP、DPPH和ABTS3种体外抗氧化评价方法进行评价。结果:杨梅渣具有较高的总酚(27.65~47.41mg/gDW)和较好的抗氧化能力。5个品种中,晚稻品种表现出最高的多酚含量、最好的总还原力以及清除DPPH和ABTS自由基的能力。膳食纤维的分析结果表明,不溶性膳食纤维是杨梅渣膳食纤维的主要成分,占总膳食纤维的82.72%~93.96%。功能分析结果表明,杨梅渣膳食纤维的持水能力和持油能力均强于其它果渣。结论:杨梅渣是一种含有大量功能性活性物质的膳食纤维资源,其开发前景广阔。
Objective: This assay aimed at evaluating the antioxidant activity, dietary fiber content and function of bayberry pomace from five cuhivars (Bqi, Wandao, Dongkui, Dingao and Zaodamei). Methods: dietary fibers were analyzed by enzymatic-gravimetric method, and FRAP, DPPH and ABTS were used for estimating the antioxidant activities of bayberry pomace. Results: The result showed that bayberry pomace present high total phenolic content (27.65-47.41 mg/g DW)and good antioxidant activity. Among five cuhivars, Wandao presented the highest polyphenolic contents best reducing power, and the scavenging DPPH and ABTS free radical capabilities. The analytical results of dietary fiber indicated that the insoluble dietary fiber was the main ingredient, occupied for 82.72%-93.96% of total dietary fiber, and the analytical results of function indicated that its water retention and fat adsorption capacities were better than other fruit pomace. Conclusions: Bayberry pomace is a kind of dietary fiber resource associated a great deal of functional substance. Its development prospect is promising.
