摘要
目的对医院糖尿病治疗膳食进行标准化定量,制作基本的菜肴营养标签和标准化菜谱软件,为糖尿病患者提供高质量的标准化治疗膳食。方法根据糖尿病营养治疗原则,结合烹调技术,制定糖尿病治疗食谱(含180种菜品),对菜品原材料用量进行标准化定量,计算其主要营养成分(能量、蛋白质、脂肪、胆固醇、碳水化合物、膳食纤维、维生素A、铁、钠、钙)含量,制作基本菜肴营养标签和标准化菜谱软件。结果制定了糖尿病治疗食谱,计算出每份菜肴中10种营养成分含量,制作了菜肴营养标签和标准化菜谱软件。结论对糖尿病治疗食谱进行标准化定量,制定基本菜肴营养标签和软件,使抽象的营养素概念直观体现在每份菜肴中,体现了每份菜肴的基本营养特性,便于营养医师对患者进行营养指导和膳食处方,也使患者膳食选择更方便、科学和多样化。
Objective To fix standard quantity of diabetes therapy dishes, make basal nutrition labeling of food and software of standard dishes. Methods With the references of nutriology and gastrology,we make the therapy dishes of diabetes and quantified the materials of each dish. Using the China Food Composition 2002, we calculated the contents of main nutriments (calorie, protein, fat, cholesterol, carbohydrate, dietary fiber, vitamin A, iron, natrium, calcium } and established the nutrition labeling and software of standard dishes. Results The therapy dishes of diabetes was made out. The contents of main nutriments were calculated. The nutrition labeling and software of dishes were established. Conclusion The nonfigurative conception of nutrients can be maierialized through normal nutrition labeling and software of dishes. It benefits for dietitian to make healthy education and order the therapy recipe. It also benefits for inpatient to select dishes expediently, scientific and diversity.
