复配天然抗氧化剂对鹅肥肝抗氧化活性的研究 被引量:7

摘要 以从鹅肥肝中提取的鹅油为底物,以固定配比甘草、槐米、紫草复配抗氧化剂(简称为LSC)为研究对象,对影响其抗氧化活性的因素进行研究。实验结果表明:同等添加量时,0.10%LSC效果比单一提取物、VE和茶多酚好,但仍比0.02%TBHQ差;LSC添加量0.2%时效果最好;0.0025%柠檬酸和0.015%VE对LSC的增效作用最强。 Taking a kind of complex antioxidant, fixed ratio of licorice, scholartree flower, comfrey (LSC) as research object, choosing goose oil as substrate which was extracted from goose' s hypertrophy livers,the factors which impact antioxidant activity were studied.Experimental results showed that.when the added volume was the same,antioxidant effect of 0.10% LSC was better than single extracts, VE and PPT, but still worse than the 0.02% TBHQ.LSC addition of 0.2% was the best.0.O025% citric acid and 0.015% VE had the strongest synergies to LSC.
