摘要
中国古籍中饴糖及蔗糖技术记载颇多,却罕有高粱茎秆制糖相关论述。本文以晚清农书《农学纂要》中高粱的相关记载为依据,分别从选地、选种、播种、施肥、收获和榨汁、熬炼、结晶等方面分别论述了糖用高粱栽培及土法制糖技术。
There are a large number of statements about the technology of making I-Tang and sugarcane in Chinese ancient books, little mentioning of making sugar out of the stems of Sorghum vulgate. In accordance with the relevant passages about Sorghum in Nongxue Zhuanyao, a practical agricultural pamphlet in Late Qing Dynasty, this paper discusses the cultivation of sorghum for sugar production and indigenous sugar-making technology at the aspects of the land preparation, the seed selection, seeding, fertilization, harvest, crushing, boiling and crystallization.
