摘要
该文进行了香蕉原浆在平板接触式速冻器冷冻过程的数值模拟及实验验证。数值模拟计算采用全隐格式差分方法,用水分冻结量的增量处理相变潜热。结果表明:计算值与实测点的温度值吻合良好。用所编制的程序,可获得香蕉原浆在平板接触式速冻器冷冻过程的每一瞬时的温度场和冻结界面等信息。
In this paper, the freezing process of banana puree in plate contact freezer was studied by means of numerical simulation and experiment. The fully implicit difference method was employed, and the latent heat release was handled with the increment of frozen water fraction. The results show that the computed temperature checks fairly well with experimental temperature. The information about the transient temperature field and the frozen interface of banana puree in plate contact freezer could be obtained with this procedure.
