叶绿素是一种天然、无毒、具有一定生理功能的脂溶性的天然色素,叶绿素产品广泛应用于食品、医药、化工等行业。根据研究报道,对叶绿素的性质、提取分离、稳定性等研究现状进行了概述,为叶绿素的进一步研究和相关产品开发提供相关依据。
